Tom joins Bathers’ Pavilion with more than 20 years’ experience working with Neil Perry and Rockpool Group, including appointments as Sommelier and General Manager of Rockpool, culminating in his appointment as Food & Beverage Director of Rockpool Group’s Premium Restaurants.Tom is known and respected as an industry leader amongst Sydney’s hospitality community and diners and was recently included in The Sydney Morning Herald, Good Foods’, 100 Good Things NSW. In 2010 Tom was awarded Australian Maître D of the Year by Australian Gourmet Traveller, who described him as: “understated and unflappable without being aloof, and ever-watchful without losing his affability…”
With an MBA specialising in Human Resources and Finance he has spent many years standardising training programs, creating development pathways, and managing a range of successful restaurants. Tom is famous for the relationships he builds with clients and is an ubiquitous presence on the floor.”
